4. RECIPE :
Weight Loss Soup
1/2 cup each of diced onions, Cerlery, Carrots,
1 clove garlic, chopped
1 Tablespoon Olive Oil
2 28-ounce cans of plum tomotoes
1 cup quick cooking rice, or use left over cooked brown rice that you add 5minutes before shuting off soup.
1 cup reduced-fat chicken broth
1 teaspoon dried parsley
1/2 teaspoon dried thyme
Use a 4- quart pot, combine the onions, cerlery, carrots, and oil. Saute for a few minutes, set aside. Put the
canned tomatoes, with juice in a blender and blend till smooth, add the tomatoes to the 4 quart pot and bring all
to a boil. Reduce the heat to a simmer for 20 minutes. Add the quick cooking brown rice and simmer for other
20 minutes. If you use left over rice simmer time is total 35 minutes or till carrots are tender and add left over
rice for 5 minutes.
