WARNING ABOUT Pancake Mix (and other boxed mixes)

A student at HBHS had pancakes this week and it almost became fatal.  His Mom a (registered nurse) made him pancakes, dropped him off at school and headed to play tennis. Luckly she had her cell phone on the court, her son called to say he was having trouble breathing. She told him to go to the nurse immediately and proceeded to call school and alert the nurse. The nurse called the paramedics and they were there in 3minutes and worked on the boy all the way to the hospital. He came so close to dying. Evidently this is more common then I ever knew. Check the expiration dates on packages like pancakes and cake mixes that have yeast which over time develop spores.

If Derecks mom had checked the date before making the pancakes for Derek he would not of been close to dying she since knows of the dangers of outdated yeast packages and wishes all to know.  I shudder at the thought of my son Derek having trouble breathing because of me and outdated pancake mix. WARNING ABOUT Pancake Mix (and other boxed mixes) (maybe you already know this, I DID NOT !!) Talk about frightening. . Throw away ALL OUTDATED pancake mix you have in your home, PLEASE! Sorry to be the Grim Reaper of bad news, but I would rather have you ALIVE, besides a $2.00 box of pancake mix is NOT worth your life.

Serves 4

4 Chicken breasts, boneless, skinless

1/2 cup Flour

2 Tablespoons Olive oil

1/4 cup Green bell peppers, diced

1/4 cup Onion, diced

1 teaspoon Garlic, minced

1/4 cup Black olives, sliced

1/2 cup Tomatoes, diced

2 Tablespoons of water.

2 Tablespoons Basil, fresh, chopped

3/4 cup Wine, white

Salt and pepper to taste

Heat the oil in a large, heavy skillet.

Dredge the chicken in flour and saute till brown. Add 2 tablespoons of water simmer till done.

Add the peppers, onion, and garlic to the pan.

Add the tomatoes, basil, and olives. Cook for 2 minutes.

Add the wine and simmer until slightly thickened.

Check the seasoning. Spoon over the warm chicken simmer again for two minutes.

Serve with a salad, rice, or noodle.
