HEALTHY RECIPE: CHICKEN POT PIE 1 cup reduced-sodium chicken broth 3 carrots, cut into ½-inch chunks 1 all-purpose potato, peeled cut into ½-inch chunks 1 parsnip, cut into ½-inch chunks 1 cup fresh peas shelled or frozen 1 cup of pearl onions or chopped to the size 1 pound skinless, boneless chicken cut into 2-inch pieces ½ cup evaporated skimmed milk ¼ cup of flour ½- teaspoon salt optional ½ teaspoon dried sage ¼ teaspoon freshly groung black pepper Two 17x11-inch sheets filo dough, cut crosswise in haft. 1. Preheat the oven to 375 degrees Large saucepan combine Broth, carrots, parnips, and ¼ teaspoon of the salt bring to a boil. Put in onions, peas, and chicken, return to boil reduce heat to simmer, cover and cook until chicken is cooked through 5 minutes. 2. Large sauce pan combine evaporated milk, flour, sage, remaining salt, and pepper. Bring to a boil, reduce to a simmer, and cook until sauce has a thickness. Stir in the chicken mixture and cook till it is creamy. 3. Pour the chicken in a 9 inch deep-dish glass pie pan. Layer the Filo Sheets on top, overlapping the sheets at right angles top each layer with nonstick cooking spray.
