2. Herbal:

Cinnamon

A popular spice used in cooking, cinnamon also is found in small amounts in many

toothpastes, mouth washes, gargles, lotions, liniments, soaps, detergents, and other products. Active

components come from the dried bark, leaves and twigs of various species of Cinnamomum- Ceylon cinnamon

(C.zeylandicum), (C.loureirii) Located in southeastern India, Indonesia, South America, and the West Indies.

The essential oils are removed by steam-distilling the dried bark and leaves.

4. RECIPE:

CINNAMON PORK

4 small lean pork steaks about 5 oz. each

2 tbsp. low-fat spread

1 tbsp. lemon juice

3 tbsp. chopped mint

1 tsp. ground cinnamon

Salt and freshly ground black pepper

Mint sprigs and Lemon slices

Use a shallow dish place the pork in the dish. Melt the low-fat spread with the lemon juice and stir in the mint

and cinnamon. Season lightly. Pour over the pork an turn the pork over, let stand for about an hour.

Grill or broil brushing with the reaming marinade, for about 10 minutes on each side till brown or cooked

through.

Place on warm plates garnish with mint sprigs and lemon slices.

Serves Four. Calories 350 or less

Serve with your favorite vegetables. And a small side salad.
