This month I would like to reach out to everyone with a special newsletter. Do you remember when you were little that life was a happy time no
hatred you loved everyone around you. Looking forward to waking up thinking only of what this new day would bring. This was a special time of
our lives we loved and love was returned. As we go about our lives and sometimes don't think about nothing but trying to make a living for
ourselves. There is no time to think about someone else. In loving your self you learn how to reach out and love others. We need to take a few
minutes a day just to let ourselves find peace within ourselves so that we can reach out and give. There is nothing so beautiful as having peace in
our heart as we give blessings to others they in turn will give blessings to you. Everyone in the world needs to learn to reach out to others so love
and peace is returned to all. God created the world we live in we created the world as it is today. I do believe in my heart that the world can
change with everyone joining together. May God be with our nation and her people during this time. Since the tragedy of September 11, America
is doing its best to get back too normal, it is certain we feel the effects. Getting through this tragedy for many is changing lives forever there is no
turning back for them. The ones who are living today are thinking what can happen next. We need to not dwell on what is going to happen next
but rejoice that we have tomorrow to enjoy. America needs to join together enjoy your love ones and live in peace with each other. Living scared
is not living this is giving into what the terrorist want you to do. Showing courage in this time of need is the way things should be. Let us not lose
heart, let us take joy in the fact that these tragedies have not divided us, but united us as the family we truly are. Let this be the beginning of a
renewal of spirituality in our nation. United we will stand.
I would like to give my thanks and blessing to the many volunteers across the country who have donated support in so many ways. This is the
greatest gift to all.

HERBAL BATHS
Aromatic plants steeped in vinegar are excellent for baths or for skin toning.
Cautions: Don't use vinegar waters more than twice a week, as they can dry out your skin.
How to make vinegar waters:
Use apple cider vinegar (it's better than white wine vinegar at preserving your skin's natural acid level). Put enough fresh aromatic herbs or
flowers in a quart jar to fill it halfway, then fill it to the top with the vinegar. Cover the jar. Let this mixture stand for seven days, shaking the jar
gently twice each day. After the week is up, strain the mixture into your labeled bottle.
Use 1 cup per bath.

RECIPE
Vegetarian Lasagna
2 carrots, shredded, about 2 cups
1-cup bite-size pieces broccoli
1 (10 oz.) thawed frozen chopped spinach, well drained
1 cup chopped onion
1-teaspoon garlic powder
½ teaspoon dried leaf basil
1 teaspoon dried leaf oregano
1 tablespoon chopped fresh parsley
½ teaspoon seasoned salt
1 (16 oz.) box lasagna noodles
4 cups (1 lb.) shredded low-fat mozzarella cheese
2 cups low-fat cottage cheese
½ cup grated Parmesan cheese
2 egg whites, slightly beaten
3 cups spaghetti sauce
In a medium-size saucepan, combine carrots, broccoli, spinach, onion and all seasonings. Add just enough water to prevent mixture from sticking.
Simmer 30 minutes or until all the liquid is absorbed. Meanwhile, cook lasagna noodles according to package directions. Drain and quickly rinse
in cold water to stop cooking; drain again and set aside. Preheat oven to 350F (175C). Reserve 2 cups mozzarella cheese. In a small bowl, mix
cottage cheese, remaining mozzarella, Parmesan and egg whites; set aside. Pour about ½ cup spaghetti sauce into a large lasagna pan. Place a
layer of noodles over sauce; add layers of vegetables, cottage-cheese mixture and sauce. Continue layering until all ingredients are used, ending
with sauce. Sprinkle remaining mozzarella over top. Bake, uncovered, 1 hour. Let stand 10 minutes before cutting.
Yield: 12 servings.
