RECIPE :
Oriental Mushroom Salad
Preparation: 6 min.
2 hrs of marinating.
2 teaspoons honey
2 teaspoons reduced-sodium soy sauce
1/4 teaspoon ground ginger
2 teaspoons red wine vinegar
2 teaspoons Oriental sesame or peanut oil
1 clove garlic, bruised
1/2 pound mushrooms, sliced thin
1 small sweet red pepper, cored, seeded, and chopped
2 teaspoons minced fresh coriander or parsley
1 teaspoon toasted sesame seeds(optional)
1. In a large bowel whisk together Honey, soy sauce, ginger, vinegar, and sesame oil. Add the garlic clove,
mushroom, and red pepper and toss well. Cover and refrigerate for 2 hours.
2. Remove and discard the garlic clove. Transfer the salad to a serving platter and sprinkle the coriander and
sesame seeds if you wish to taste and serve.
Variation:
Mushroom salad with bean sprouts Omit the sweet red pepper. Add 3 green onions, sliced with tops included,
and 1/2 cup drained bean sprouts. Proceed as directed above.
Tip:
Mushrooms darken quickly once they are cut, slice or cut them last. If you don't use all of them that you cut,
brush the cut surface with lemon juice or vinegar.
